Smokey bacon, drizzled in sweet maple syrup, with a side of nut brittle, served at the foot of a crashing wave. There's some lemons floating in that wave somewhere, a slight citrussy tang follows.
A smokey meatiness, reminiscent of a summer BBQ, or is it toffee apples at the side of a smouldering bonfire? All of this must be happening at the Islay coast because there's a strong influence of sea spray. It's carrying a boat load of Sicilian lemons and apples, along with a slight medicinal hint.

Mike is many things, but sensible is by far not one of them. He likes to stir the pot and poke some good-natured fun at some of the more pretentious malts out there.

The custom cask used to finish this Firkin Islay was a combination of American first-fill Bourbon staves & new French Limousin oak staves, seasoned with a custom char and sweet Sicilian marsala wine.
